Abstract: The present work, divided in two experiments, was carried out in the poultry sector of the Federal University of Tocantins, Araguaína Campus with the objective of evaluating determine the coefficients of apparent metabolizability of dry matter (CAMDM), crude protein (CAMCP), crude energy (CAMCE), the apparent metabolizable energy (AME) and the corrected apparent nitrogen metabolizable energy (AMEn) of rice, whole rice bran and rice broken and inclusion of whole rice bran levels in diets for slow - growing chickens. In the experiment I were used poultry with 21 days of age, Neck Red Pelado. The design was completely randomized, with four treatments and five replicates of ten birds. The treatments consisted of a reference diet and three diets tests, in which rice, rice bran and rice broken replaced 30% of the reference diet.. In the experiment II were used 300 one-day-old chicks, Neck Red Pelado. The design was completely randomized experimental design, with five treatments (0, 5, 15, 20 and 25% whole rice bran inclusion), six replicates and ten poultrys per replicate. Were evaluated the performance in the periods from 1 to 30, 1 to 60 and 1 to 90, carcass and noble cuts yield, organ biometry and colorimetry of the skin and breast meat of chickens slaughtered at 90 days were evaluated. In the experiment I, it was observed for rice, values of AME, AMEn of 3870, 3740 kcal kg-1 and 96.2%, 76.3%, 96.9%, for CAMDM, CAMCP, CAMCE, respectively. The rice broken presented values of AME, AMEn and CAMDM, CAMCP and CAMCE, from 3460, 3410 kcal kg-1 and 94.6%, 36.4% and 93.2%, respectively. The rice bran obtained the following results: 68.1%, 32.4%, 71.9% for CAMDM, CAMCP, CAMCE, 3300 and 3280 kcal kg-1, for AME and AMEn, respectively. In the experiment II, the inclusion of whole rice bran levels did not influence (p> 0.05) feed intake, weight gain, feed conversion ratio and final weight at 30, 60 and 90 days, carcass yields and noble cuts, the relative weights of gizzard, liver, heart, abdominal fat, small intestine, spleen and bursa. However, there was an increasing linear effect (p <0.05) for weight and length of the large intestine. For the variables of skin and meat colorimetry, the inclusion of rice bran promoted a linear reduction (p <0.05) in the color parameters (b *) of the skin and meat, besides providing a linear increase (p <0.05) in the values of Luminosity (L *) of the meat. For the other variables, no significant effect was observed (p> 0.05). It is recommended to use up to 25% of rice bran in rations for slow-growing chickens.
